I’ve got another FEEDback recipe here for you, just in time for the weekend. These cheesy pickled pepper mini frittatas are like little flavor bombs that ALWAYS satisfy and do their job so well. Breakfasts should energize and fuel us, right? Giving us the necessary goods to get through the day without crashes of any sort. This recipe does just that. The combination of sharp and tangy pickled peppers, scallions, and smooth Tillamook Swiss cheese is a bit unusual, admittedly, but it’s delicious and always very crowd-pleasing. Speaking of Tillamook, they have – very generously – come in as a major supporter of this FEEDback initiative of mine, and donated a hefty sum of money to ensure that my food blogger friends and I can pull off the meal packaging event with Rise Against Hunger next Saturday.

I’ve always been a huge fan of Tillamook, ever since I first sampled some during a visit out to the Pacific Northwest, but it is this extra layer of generosity and altruism that is so very apparent in their company that has made me a loyal, life-long fan. For our “Eat Well + Do Good Breakfast” next Saturday, I developed this frittata recipe using Tillamook’s delicious Swiss cheese loaf as an ode to them, a symbol of my gratitude, and also as a killer way to start off our day of giving back and working to kick global hunger to the curb.

Pickled Pepper Mini Frittatas

Packed with flavor and ease of preparation, these mini muffin frittatas are the perfect thing to serve a crowd or to freeze for individual breakfasts on busy weekdays (I LOVE using this recipe for that purpose). These egg bites are based on a classic Southern party dip – cheese slaw – that combines the rather unusual flavor pairing of scallions, pickled peppers, and Swiss cheese in a mix that usually raises some eyebrows and piques curiosities. But it’s incredibly delicious and always a crowd pleaser, and it will help fuel and energize my guests before a day of giving back.

Ingredients

  • 5 eggs beaten
  • 2/3 cup milk or half and half
  • 1 scallion finely chopped
  • 1/3 cup pickled jalapenos jarred, chopped
  • ½ cup pickled banana pepper rings chopped
  • ¾ tsp salt
  • ½ tsp freshly cracked black pepper
  • 2 cups shredded Tillamook Swiss cheese

Instructions

  1. Preheat your oven to 375 degrees F. Spray a 12-cup nonstick muffin tin with a natural non-stick spray.
  2. In a small bowl or large measuring cup, whisk together the eggs, milk, and remaining ingredients until well combined. Pour the mixture into the prepared muffin tins, filling them about ¾ of the way to the top. I usually get about 6 or 7 frittatas.
  3. Bake for 22 minutes or until the eggs are set and just beginning to brown on top. Remove from the oven and let cool for 5 minutes before transferring the frittatas from the muffin tins. Enjoy!
