Today, a quick and to-the-point sort of post. But it is no less delicious than the posts that come with fully fleshed out stories, ramblings and ponderings. I’m heading out the door in (literally) five minutes for 2.5-weeks away with my family. We’ll stop in Kentucky to visit my parents, move along to Virginia to visit Lucas’ parents, and then finally, we get a week-long stay in California, just the two of us. Can you feel my excitement? We’ll be spending a weekend hiking and exploring in Yosemite and then a few fun days in San Francisco with family as well as a stop at my book publisher. I will finally get to meet the team making my book-baby and see it taking shape. I’m sure I’ll get all weepy and emotional, as I tend to do. Ah, well. I’m giddy with the anticipation of it.

I wanted to leave you with a really great salad before I hit the road today, and this is one I truly have on a very consistent rotation in our house. Honestly, it’s a homemade version of the “Fuji Apple Chicken Salad” from Panera, which I’ve loved for years. I pair punchy red onions with sweet apple chips and take a little help from my supermarket by using a rotisserie chicken.  The peppery radishes, to me, really go so nicely with the sweetness of the honey mustard and the apples – such a wonderfully balanced cast of characters here. I hope you give her a go!

Crisp Apple-Radish Salad with Rotisserie Chicken & Cracked Pepper Honey Mustard Dressing

Serves 4.

Ingredients

  • 5 cups mixed greens
  • 2 rotisserie chicken breasts chopped or shredded (or you can use the cuts you like)
  • ½ cup sliced red onion or to taste
  • 2 cups apple chips store-bought
  • Handful of radishes thinly sliced (any variety, such as Easter egg, watermelon, or regular)
  • Radish microgreens optional
  • Crumbled goat cheese optional
  • Cracked Pepper Honey Mustard Dressing see below

Cracked pepper Honey Mustard Dressing

  • ¼ cup Dijon Mustard
  • ¼ cup honey
  • ¼ cup apple cider vinegar
  • 1 tsp kosher salt
  • 2 1/3 cups canola oil
  • 2 tsp freshly cracked black pepper

Instructions

  1. To assemble the salad, arrange the greens on a large platter (you can also create individual servings on separate plates, if you prefer). Top evenly with pieces of the chicken, some red onion slices, the apple chips, and some radishes – using as much or as little of each component as you see fit. Drizzle with the cracked pepper honey mustard dressing and serve right away.
  2. To make the dressing, combine all of the dressing ingredients in a mason jar or other lidded container and shake to emulsify and mix well. Alternatively, you can blend everything up in a blender on medium speed until well mixed.
